“Eating well can, and should, be joyful,” is my motto, and I’m thrilled to share both my motto and my culinary creations with Beaming. I believe that the food you eat should be full of bright colors and scrumptious flavors that leave you feeling satiated, not restricted, and I’m proud to have made a career out of proving just how possible that task is for everyone!

 I grew up in a time before the onslaught of commercial organic food, back when store-bought “health food” was bland and beige. There were scant options to be had from out in the world other than simple bulk ingredients like oats or rice, and there definitely weren’t many healthful restaurants around yet! My mom ran a co-op out of our basement and made nearly everything we ate, all of which was vegetarian after I was nine or ten years old. Her food was some of the best I’ve ever had, crafted with love and in-season ingredients purchased at local farm stands. My understanding of food was established early on: it needs to be a delight to eat as it nourishes you. There was no shortage of wonderful snacks or desserts in our home, ever. It was strange to never eat anything out of commercial packaging like other kids did, but my mom’s whole food cooking and the time I spent in the kitchen with her turned out to be the only training I needed to forge a profession in the culinary industry. 

Ever since my first chef job at age nineteen I’ve been in and out of countless kitchens, dabbling in other professions but always returning to my home in front of a stove, feeding others, even though I didn’t initially feel like I was “meant” to be a chef. Then a few years ago, after a long bout with chronic illness (from which I recovered holistically), I realized that my purpose really does involve food—just not in the way I originally assumed. I’m here to help others feel better, and food is one of the most natural ways for me to relate to people and improve their lives. Once I discovered my purpose in a more comprehensive way, my career took off, and since then my life has been a whirlwind of celebrity clientele, public speaking engagements, media and tv appearances, books, articles, and more.

As a special diet chef and certified nutritionist whose culinary background has predominantly been in the private sector, the easiest way for me to get my recipes to the general public is through my writing. I’ve written two bestselling cookbooks, and I contribute articles to websites like Livestrong and Beachbody. While I love writing, I’ve also wanted to offer people an option that was lower effort than making my recipes themselves. I spend my work time in the kitchen experimenting or in front of the computer typing and I don’t necessarily end a workday with anything of my own to eat—so I have a solid understanding that no matter how easy a recipe is or how delish it looks, sometimes you just don’t have it in you to cook!

The act of purchasing a meal involves giving your trust; from your taste buds to your digestion, eating something someone else has created is a faith-filled act where you trust your body and senses will be treated well. When Beaming approached me about crafting menu items, my thoughts went straight to what recipes of mine would give guests a joyous experience and put a sparkle in their eyes. Color is one of life’s great joys to me (which is pretty obvious by the rainbow-y ink all over my skin!) so I wanted to make sure to bring you the most fun, multi-textured, heavenly dishes I could come up with.
