Every week in the month of May, our blog will feature a topic for Moms and kids – Today’s topic is healthy breakfast ideas for the whole family.
As a Mom of 3 kids, I know how hard it is to have my kids make healthy choices for breakfast, snacks or lunch at school. Being the founder of a healthy gourmet vegan café, people often assume that my kids eat “healthy” every day and as much as I wish they did, I will admit that they do not. Just like most parents, I struggle with how to get my kids to eat more vegetables or make better, healthier choices. Especially when so many of their friends at school are eating, let’s say, foods I would prefer my kids were not tempted with – Fruit Loops or Frosted Flakes, Gold Fish, Gummy Worms, Doritos, sandwiches made with white bread or white pancakes for breakfast with zero nutritional value.
Not that my kids don’t have some of these things every once in awhile (actually, they don’t but we do have our other not-so-healthy weaknesses). I do believe, however, that there is a way to not only make healthy foods taste great for kids, but to also help them feel like they are excited to be part of the process. Part of my goal in creating Beaming was to have a place where the whole family could find healthy snacks and meals that they could all enjoy – and possibly even crave. Fortunately, it seems to be working as we have families, teens, young children and kids of all ages frequent Beaming every day – and I hear from parents all the time that their kids bring Beaming to school for lunch. This lights me up with joy, knowing that many kids are choosing Beaming over other not-so-healthy options. These kids are even making our Beaming smoothies and snacks at home!
In developing many of the recipes for Beaming, my kids were (and still are) very involved in the testing and approval process with me. This has been especially important when it comes to our smoothies, juices and new superfood (dairy & gluten free) baked goods. Ultimately, their vote rules. What I love, is that I have figured out a way to sneak in greens and superfoods that they may otherwise reject or gag at the thought of. I also love the fact that I have found a way to make these superfoods taste delicious (without loading them with sugar or fruit). Not an easy feat!
So in the spirit of Mom’s Month (much like “Birthday Month”), Mom’s deserve to be celebrated all month long which is why I am sharing some of my favorite tips and recipes for making “HEALTHY,” delicious and fun for the whole family. And because I am feeling extra generous, I am even going to share our infamous Superfood Chocolate Chip Banana Bread recipe that is gluten and dairy free, filled with protein and omegas and absolutely DELICIOUS. And yes, my kids approved this too!

Beaming Banana Bread
3 T flaxseed powder
1/3 cup unsweetened almond milk (homemade or boxed)
1 ½ cups Living Intentions superfood flour (available at Beaming or online)
¼ cup Beaming Superfood Protein w/Greens (available at Beaming)
1 tsp baking soda
1 T baking powder
1 T cinnamon
¾ tsp sea salt
¼ cup melted coconut oil
2/3 cup coconut palm sugar in mix
¼ coconut palm sugar sprinkle on top when in pan
1 ½-2 cups mashed bananas (3-4 bananas – 3 very large or 4 medium)
½ cup hemp seeds
½ cup chocolate chips / carob chips / sweetened cacao nibs
350 oven. Grease pan with coconut oil.
Mix the flaxseed powder with the almond milk to make the “egg mixture. Set aside for 5=10 minutes.
IN a medium bowl, mix flour, baking soda, Beaming protein, baking powder and salt.
IN a large bowl, blend the coconut oil, palm sugar (1/2 cup), flax mixture, and mashed bananas until well combined. Add in hemp seeds and cacao / carob chips. Sprinkle coconut sugar on top. Bake for 45 minutes on 350 (for a loaf pan – for muffins – reduce time)
Secrets to the perfect, healthy, delicious pancake for the whole family!
Using your favorite gluten free or whole grain pancake mix, its easy to make them super nutritious, non guilt, delicious pancakes for your entire family to enjoy. My kids LOVE these pancakes.
The key is to substitute regular oil or butter with coconut oil, milk for almond milk and add a bit of Beaming Superfood Plant Protein (2-4Tablespoons) – if you are ok with eggs, keep the egg. All of this adds nutrition, lots of protein and the perfect nutty, sweet flavored pancake. Add hemp seeds if desired and bananas while cooking.
For chocolate chip pancakes, choose a great chocolate chip (I happen to love Trader Joes chocolate chips or a raw chocolate like Gnossis or Nomad) and of course, whip cream or maple syrup to top them off.
Our SIGNATURE Beaming Basic Superfood Protein Smoothie
This is our full-proof smoothie that you can customize with your favorite superfoods, fruits and veggies
1 1/2 cups unsweetened almond milk (organic boxed or homemade)
2-3 T Beaming Raw Organic Plant Based Superfood Protein Blend (blonde or with greens)
1/2 frozen banana
(want a low glycemic version? replace the banana with 1/3 avocado)
1 pitted date (optional)
cinnamon & vanilla – (optional)
a few ice cubes
Blend well and enjoy!
